Part of the Four Star series, the santoku knife is made of high-carbon stainless steel and precision-honed, with a laser-controlled edge, a balanced super-bolster and a tang that extends to the back of the polypropylene handle which is permanently bonded for seamless accuracy. Indentations along the blade help reduce "drag" when slicing, and prevents food from sticking. Dishwasher-safe.

    Good but not great.

    I purchased this knife because of the claim that products would not stick to the knife blade. Not true. Cutting onions is the true test for me and indeed when cutting onions using this knife they stuck to the blade on the upward motion. I have other Henckels knives - one in particular, the chef's knife is a great cutting tool - heavy in your hand and superb cutting power - but vegetable products stick. Overall: The 5

    I find that I go to this knife nearly everytime I am cooking. It is a good size, easy to handle and well balanced. I would highly recommend it for anyone's kitchen. I liked it so much, I even ordered one for my mom for Christmas!
