Made in Solingen, Germany, this hollow edge santoku is forged, not stamped. Blade density is improved using the FRIODUR ice-hardening process, which provides a sharper initial edge for easier maintenance over time. Part of the Four Star series, the santoku knife is made of high-carbon stainless steel and precision-honed, with a laser-controlled edge, a balanced super-bolster and a tang that extends to the back of the polypropylene handle which is permanently bonded for seamless accuracy. Indentations along the blade help reduce "drag" when slicing, and prevents food from sticking. Dishwasher-safe.

    Cutting edge!

    I love this knife. Returned a cheaper set that didn't agree with me (or my fingers). This knife is so sharp, but well-balanced. I use it over most of my other Henckels. Will probably get the larger one next. Although, this knife tackled the largest head of cabbage I've ever seen as well as the rest of the chopped veggies in the Moosewood Russian Borscht recipe.
