It's made of high-carbon stainless steel and precision-honed, with a laser-controlled edge, a balanced super-bolster, and a tang that extends to the back of the polypropylene handle, which is permanently bonded for seamless accuracy. The size and weight make it ideal for just about any slicing or chopping prep work, particularly with large vegetables, like eggplant, lettuce or cabbage and cuts of meat and poultry. J.A. Henckels has been manufacturing fine cutlery since 1731. Made in Solingen, Germany, its knives are forged, not stamped. Blade density is improved using the FRIODUR ice-hardening process, which provides a sharper initial edge for easier maintenance over time. Larger knives are crafted using Henckels' exclusive SIGMAFORGE® standard.

Features of SIGMAFORGE® knives are:

  • New one piece construction
  • High forging precision
  • Higher stability of blade
  • Perfect geometry
  • Improved steel structure for less metal fatigue
  • Improved cutting-edge retention and lasting sharpness
  • Improved weight and balance
  • FRIODUR® ice hardened for maximum no-stain properties and more blade strength

This knife is an exquisite go to blade for every day workhorse performance. It's "beefy" in your hand AND in it's performance. It holds an excellent edge and feels terrific in the hand and in this house, will get a LOT of use.

Third attempt at buying a good knife
    by Rebecca, WA

I purchased this knife based on reviews. The one that caught my eye was about the weight of it. I was so tired of hand testing store knives and finding them so light. That may not be a priority for everyone but it is for me. The blade was out of the box extremely sharp, the handle fit fine in my hand and the shape/size make it an ideal go-to knife. I have 2 other knives that are not so bad but their sets to expand with were very limited. The Henckels line seems to have everything we need to replace our aged, dull (no longer holding an edge), ancient stock knives.

A must have knife in the kitchen, I use it for a variety of tasks. The handle is really comfortable in my hand and the blade is nice and sharp. I've had Henckels knives in the past and they always deliver a quality product.

    Just the right size
    by Dan, NV

I have lots of knives, and this one will be my go-to knife for a long time. This blade is large enough to chop and dice, and small enough and sharp enough to make fine cuts (think silverskin on pork loin). Great hand feel, too. I got it during a sale, which helps, but the quality of Henckels makes them worth the price.

Great knife to start your kitchen
    by Carilynn, ME

This is the second of the same knife I've bought-I melted a spot on the handle of the first on my stove and wanted a new one-Cooking.com was having a great sale. We have Shun and Global chef knives as well-we love to cook-and the Henckels is excellent-we reach for it nearly as often as the other two. I highly recomend getting this as your first good knife if you're starting your kitchen and are on a budget. Good knives are the most important tool in the kitchen.

This is a wonderful multi-purpose knife that I use daily. It slices very well and is good for chopping, too. I cook in 3 kitchens and have one in each kitchen.

Here's a trick to remember the next time you're cooking with something leafy like cilantro: to quickly separate the leaves from the stems, hold the stems in one hand and shave the leaves off with a super-sharp chef's knife.
