Like all the Calphalon products I've used this double boiler insert is of the highest quality and workmanship. However, like others who've reviewed this product I failed to reailize that it did not fit any of my Calphalon One pans.

This is an excellent double boiler, but contrary to the description, it does not fit the Calphalon Commercial Hard-Anodized 2-1/2-Quart Shallow Saucepan.

Great Double Boiler

I thought several favorite recipes were going to be gone forever when I broke the semi-antique Pyrex double boiler that I'd "inherited" from my mom (in the 70's!). After juggling with floating pans on top of each other, I found this insert. Contrary to some of the reviews, it fits perfectly in my Calphalon saucepan (2.5 qt - #870212), and I love it!

Egg-based emulsified sauces such as Hollandaise tend to break for one of two reasons; either it got too hot, or the butter was added too quickly (meaning it got too cold). If your sauce breaks, add a splash of water to a pan and drizzle the broken sauce in drop by drop, whisking constantly, until re-emulsified. For next time, remember that keeping a consistent temperature is key.
