be very careful if you purchase this product. it's unclear from the cooking.com site which calphalon products this is compatible with, and from the calphalon site, it's not that much clearer. we purchased this and it *does not* fit with the calphalon products we purchased from cooking.com. i'm actually not convinced that this product is compatible with any of the calphalon products that cooking.com stocks, which seems unfortunate and puzzling to me.
This is an excellent double boiler, but contrary to the description, it does not fit the Calphalon Commercial Hard-Anodized 2-1/2-Quart Shallow Saucepan.
It was impossible from your display to see the inside of the insert. I would have prefered an insert without the ridgeline inside, ie. a completely smooth interior. The insert works fine beyond that issue.
I read all the reviews on this product before purchasing. My only concern was how the double boiler insert would fit my Calphalon pan. To my amazement, it fits mine perfectly - like it was made just for my pan and it was on sale too. Double Bonus!!
Love it. Like the way the bottom is rounded to accommodate a whisk (unlike other double boilers I've had, which have had flat bottoms). Fits my Calphalon Tri-Ply 2.5-qt. saucepan perfectly.

Egg-based emulsified sauces such as Hollandaise tend to break for one of two reasons; either it got too hot, or the butter was added too quickly (meaning it got too cold). If your sauce breaks, add a splash of water to a pan and drizzle the broken sauce in drop by drop, whisking constantly, until re-emulsified. For next time, remember that keeping a consistent temperature is key.
