I used to think that a good braiser had to be very heavy. Since I'm seventy years old, I can't deal with heavy pans anymore. My daughter recommended All-Clad because she has been cooking witht their pots and pans for years and has raved about them.
So, I bought the All-Clad, invited my daughter and her husband for dinner, and cooked beef short ribs.I used the braiser for browing meat and vegetables on the stove, then added wine and put it in the oven.Beyond fabulous! Of course, a good recipe helped (Mario Batali short ribs), and the braiser cooked the meat to perfection.I'm going to be using this braiser often, the 6-qt , by the way, is just the right size. And, it wasn't cumbersome, so I could easily handle it. What a great purchase!
