First impression out of the shrink wrap? Heavy. If you're not accustomed to using a heavier chef's knife, this will take some getting used to, but, if you persevere, you will be rewarded with a fine cutting instrument. The blade's grinding is deceptive because it looks like it has no apparent edge at all; that is until you lean into your task and discover that you have a very sharp blade at your disposal.
I have a full rack of knives to choose from, and I purchased this 7" Mofotoku on an impulse [the nice Cooking.com price did not deter my selection], never thinking it would become a favorite. It is. I highly recommend it for anyone who wants to be treated to a surprising bargain knife that executes on every task you ask of it.
