These Kyocera ceramic knives are a unique alternative to metal-based versions with a resin handle for a highly controlled grip. Unlike a forged metal blade, which is soft and susceptible to chemical corrosion, the Kyocera zirconium oxide blade resists this wear and holds its edge for months to years without sharpening. Stain and rust-resistant, the blade is impervious to the food acids, wich discolor steel products. A non-stick ceramic surface makes for easy cleanup and a lightweight and perfect balance make it a pleasure to use. My favorite knife. Try a ceramic knife with food that oxidizes with metal and it won't anymore. We sat through an entire meal with sliced avocado on a platter and it looked as fresh as if it had just been cut by meal's end.

Great knife but Yoshi is better and cheaper

I do like the knife but it wasn't cheap. The $20 Yoshi knife I bought has a better handle and sharper blade. But I needed a knife of this length and it is a great knife.

Great Knife For Very Fine Slicing

This knife is sooooo sharp it's almost scarey! Watch your fingers!!!! It is wonderful for delicate fruits and veggies to get them paper thin. Love it but take care when using! Extremely sharp!

It is the best knife I have ever used. It is very sharp, light weight and since I have had it, I have not used any of the other knives I own.

I've only used it a few times, but its sharp and easy to clean. I expect that it will also be durable and will keep its edge.
