This product put a better edge on my knives than they came with, and they are one of the top German brands. It is easy to use, and the automatic spring-loaded edge angle feature works as advertised.
The instructions for this knife sharpener are complicated, obtuse & difficult to understand. They are written as if the only people using the machine are professional knife sharpeners who have sharpened thousands of knives. The instruction manual could be significantly improved by putting in some pictures of knives & the machine in action.
The performance of the machine is excellent. My solid edge knives couldn't be sharper -- and perhaps even sharper than when purchased. I'm not so sure it does much good for the serated knives -- I don't see much difference. But then, perhaps, I don't understand the directions for serated knives (other than it says that it supposedly works on them).
I got it because it was recommended by Cooks Illustrated/America's Test Kitchen and they did not steer me wrong. I have kitchen knives that I have had for over 30 years. This sharpener is easy to use and has made the edges like new. It is expensive; no doubt about it, but it is worth it.
I purchased this for my husband, and he is very happy with all our sharp knives. He appreciates the ease in using the sharpener, and the results. Good product!
I have retired my sharpening steel since I bought this great product. If you are investing in a set of fine knives, this sharpener is a must. Plainly put, it is very effective and very easy to use. Your knives will be sharper than when you first obtained them and will actually feel more useful. The price sounds like a lot until you realize how much a good set of professional quality knives costs.
