The definition of Santoku is "three good things", referring to the three main cutting tasks the knife performs: slicing, dicing and mincing.

I bought this with the 5" knife as a set. I do like the straight edge. Knife has good balance, easy to work with. Edge wasn't super sharp but it didn't take long to get it there with my diamond hone. After that a touch up with a steel was all it needed.
these knives will rust if not dried imediatly after use
I was pleased with the comfort and the knifes ability to keep an edge. It works good for all the tasks I use it for in the kitchen. I would recommend it and I am pleased with calphalon products.
