First cold-produced from select olives, Rachael’s All-Italian EVOO is the natural juice squeezed from Italian olives one day after the harvest. No heat or chemicals are used in extracting olive oil. This is very good olive oil, although it is really meant for eating rather than cooking. Spanish olive oil is the best, the purest, and is meant to be used for cooking purposes. But this is good olive oil for salads and the like.
