You don't need to be a Japanese sushi chef to appreciate the precision and lightness of this 8-inch Chef's knife. The long, slightly curved blade allows the home or pro chef to work in the efficient rolling motion for chopping and dicing, especially ideal for dense vegetables and fruits. The combination of extreme sharpness and unique, Damascus blade makes it an efficient choice for a lifetime of use.

Made in the ancient city of Seki, Japan, Shun knives rely on extremely sharp blades, made of Japanese VG10 steel clad with 32 layers (16 on each side) of high-carbon stainless, it delivers precision slicing, cutting and chopping unprecedented by its competitors. Imagine, a knife made the same way as ancient Samurai swords, handcrafted still today. Sharper out of the box than other knives, the Shun Classic maintains its sharpness longer, since the finely-polished blade edge has a natural tendency to remain straighter, yet can be honed using a standard steel or sent to the factory for free sharpening. The wavy, Damascus-look pattern on the blade offers stick resistance, reducing prep--plus it's rust-free. The Alton Angle, a design contribution of cookbook author and celebrity chef Alton Brown, provides more finger and knuckle clearance than a standard, straight knife allows while cutting and slicing. The 10-degree angle at the bolster also provides extra leverage to improve control and efficiency, particularly useful with smaller knives. The ebony Pakkawood handle, made of a durable white birch wood and resin combination, has a unique curved shape to fit firmly and comfortably in the hand, with the bonus of being dishwasher safe and NSF approved for commercial kitchens.

Great Knife

We splurged on this knife, replacing a Gerber that lost its tip when it fell point-first into a linoleum floor. I thought the handle looked gimmicky, but we like Alton, so gave it a try. It is really nice.

Now I understand why they always go to a tomato to show off a knife. I sliced a very ripe one, and it was like there was no skin, slid right through, very thin slices. We tried a lemon, and that was a breeze too. I had no idea how dull our knives were, until now. The handle is very natural and comfortable, too. It kept me from knocking my knuckles into the counter while slicing.

Here's a trick to remember the next time you're cooking with something leafy like cilantro: to quickly separate the leaves from the stems, hold the stems in one hand and shave the leaves off with a super-sharp chef's knife.
