Slowly replacing all knives with Shun

I have all sorts of knives made by many different manufacturers and after many honings and sharpenings, I have decided to replace the majority of them. After doing a lot of research, I decided that Shun best met my needs and desires. They are not cheap, but they are well worth the money. I now own 6 Shun knives (including 1 Ken Onion chef knife with stand), and want to own more. When I purchase a new Shun, I give the old knife to my daughter who does not yet realize the need for a truly sharp high quality knife.

Remember never to store good bakery bread in plastic bags- it will ruin the crust. Instead, store in a paper bag at room temperature. If you don't finish it within a day or two, slice and put in the freezer for the next time you want toast for breakfast.
