Stuffed Jalapeño Peppers Recipe

  • 16 medium-sized jalapeño peppers*
  • 3-4 oz. cream cheese, softened
  • 3/4-1 cup shredded cheddar cheese
  • 1 clove garlic, diced
  • 2-3 green onions, sliced
  • 2-3 sun dried tomatoes (oil-packed), chopped
  • 8 slices bacon, halved (optional)
  • Salt and pepper to taste
  • Water-soaked toothpicks (5 minutes of soaking)

    Preheat grill to medium. Cut off top of each pepper and carefully core the pepper, removing all seeds. If you do not have a jalapeño corer, a vegetable peeler is a good kitchen tool for hollowing out peppers. Remember the oils in jalapeño peppers are very hot, so take care not to touch your face or eyes. Place the peppers upright in roasting holes.

    In bowl, mix cream cheese, cheddar cheese, garlic, onion, tomatoes, salt and pepper. Put mixture in pastry bag and pipe cheese evenly into peppers. A knife or spoon may also be used to stuff the peppers. If desired, wrap upper half of each piece with a 1/2 slice of bacon and skewer with water-soaked toothpicks. The water helps keep the toothpicks from catching fire.

    Grill peppers until bacon is done, about 20-30 minutes. Serve hot.

    *The size of jalapeño peppers may vary by grocer, region and season. If peppers are too small, skewer them with water-soaked toothpicks to keep peppers from falling through roasting holes.

    Nice little roaster. Works great and cleans up easily. Get yourself a jalapeno corer to make cleaning them easier on yourself. I suggest getting peppers that fit half way down into holes and use a toothpick thru the middle. The peppers shrink when they roast and will slide down and big fat ones won't stay in hole and will tip over. If you roast in the oven, place roaster on a baking sheet,makes moving easier and save cleaning the bottom of your oven.They will drip as they roast and if you stuff with raw meat or anything that produces liquid when cooked you will need to poke a hole in the bottoms with toothpick prior to stuffing so liquids can drain.Check out www.chilegrill.com for a corer and recipes, they have tons of large roasters also.     Used the roaster a couple of days ago out on the grill and it was very stable sitting on the grill and the peppers were secure and cooked properly. After the peppers fully cooked and the roaster had a chance too cool off it's non-stick surface cleaned up well. Having looked at other roasters of this type, it's ease of handling and especially it's apperance made purchasing this roaster a pleasure.

    The Jalapeno Roaster is a great idea. My jalapenos were a little large to fit the holes though so my next purchase were more appropriate sized! Be sure to keep that in mind.

    I bought this for our smoker to smoke cream cheese filled jalapenos. It's just perfect. I should have bought 2 or 3 for parties. Will probably buy more on my next order.
