It is not an exaggeration to call this pan revolutionary. Like all springform pans, its sides are separate from the bottom and spring free automatically when the clamp is released. These sides, however, have a nonstick coating, so there is no need to run a knife between the pan and the cake—say good-bye to ragged edges. The base is heat-proof glass, which won't be marred by a knife when the cake is sliced and makes a nice serving plate. Finally, the pan has two large handles, a benefit when the filled pan needs to go from counter to oven.

We made a wonderful NY Cheesecake last week and we use the glass bottom as the serving plate as well, no need to transfer the cake, and it can be cut on as well.

The rating by Cook's Illustrated of this springform pan was right on target. Unlike almost all other springform pans, an excellent feature of the Frieling pan is its handles, which makes it so much easier to handle the pan!

Excellent for Cheesecakes

I've been making cheesecakes for years now and have always had problems with cutting the cheesecakes when they were sitting on the non-stick metal bottoms. This pan has a glass bottom which makes it easy to cut on and without worrying about the bottom becoming cut or hurting the non-stick surface. In addition, the handles make this ideal for putting into a water bath for the cheesecake cooking process and for lifting it out when it's done. Brilliant! The springform pan closes tightly around the glass bottom and the buckle keeps it tight. It's well made, sturdy, and should last for many years. And, best of all, it produces great cheesecakes!

One way to ensure a beautiful cheesecake is to properly care for your springform pan.To prevent warping, make sure to always position it on a flat surface before opening. Simply holding it in mid-air while opening will cause the pan to lose its perfectly round shape. When finished, be sure to wash by hand and let air-dry on dish towel placed on a flat surface. Store the pan in a box or other safe place so it won't risk getting dented by your other cookware or bakeware items.
