In his previous books, Rick Bayless transformed America's understanding of Mexican cuisine, including authentic dishes and cooking methods as he walked readers through Mexican markets and street stalls.

As much as Rick loves the bold flavors of Mexican foods, he understands that preparing many Mexican specialties requires more time than most of us have. Mexican Everyday is written with the time sensitivities of modern life in mind. It is a collection 90 full-flavored recipes--like Green Chile Chicken Tacos, Shrimp Ceviche Salad, Chipotle Steak with Black Beans--that meet three criteria for everyday food: 1) most need less than 30 minutes' involvement; 2) they have the fresh, clean taste of simple, authentic preparations; and 3) they are nutritionally balanced, full-featured meals--no elaborate side dishes required. Companion to a thirteen-part public television series, this book provides dishes you can eat with family and friends, day in and day out.

The book is filled with recipes that you could make during the week after a day at work. So far, I haven't hit even a mediocre one yet (although I have not made any of the desserts.) The recipes are not overly complicated, don't need special equipment, and emphasize fresh ingredients. You will need to look a bit farther afield to find some of the chile powders. Excellent book!

Another excellent, easy to use Mexican cookbook from Rick Bayless. He includes the history of the recipes, as well as interesting and/or historic facts about Mexico. I especially like the "Riffs on..." supplements at the end of the recipes. I'm always 'adapting' recipes to suit either my mood or my pantry, and this gives even more ways to vary menus.

Everything is easy to follow. Rick tells you where to purchase all the ingredients that I'm not used to cooking with, and the recipes are delicious!

Cooking Tip From the Food Network Kitchens

It's always tough to keep track of recipes that you want to make from each cookbook. Instead of trying to remember recipe names, or filling each book with sticky notes, make a personal "index" on a piece of paper and store it in the inside front cover. That way, when you're browsing through a cookbook you can write down the name and page number of a recipe that catches your eye, and you can easily refer back to your index instead of flipping through the book to find it.
