Reasonably sharp, sturdy, balanced, ergonomic non-slip grip. A little bit lighter than it looks.<br><br>It is not a chef's knife though, so don't expect to use it like one. I still use a 6-inch chef's knife to section and core an apple.
I have worked as a professional chef in the past and so am well aquainted with quality cutlery. This is not the best knife I have ever owned, nor is it by far the worst. This is a well made knife and razor sharp out of the box. The handle is comfortable and the knife is well balanced. I wasn't particularly thrilled by the emblem embedded in the handle and had I know that was what that was in the picture, (I thought it was a rivet) I may have passed on this model. Overall it is consistent with Wusthoff's usual quality and a bargain at the price I paid from Cooking.com. It remains to be seen how long the edge lasts and how well it holds an edge when it gets re-sharpened. I send all my knifes to a professional for sharpening and they do great work. I highly recommend this knife as a good all-purpose parer. I also recommend any serious cook get their knives sharpened professionally and regularly.
I love this paring knife for it's sharpness and comfort when using. I find myself reaching for this knife for almost everything. I would definitely recommend this knife.
good balance and ergonomics, great knife
The weight is wonderful; I like things with that aren't so light. The knife does work as an extension of my hand.


Paring #2: Making a cherry pie but forgot to pick up a cherry pitter? Don't fret, a sharp paring knife will easily get the job done. Just slice the cherry in half lengthwise, gently twist the two sides apart, and pop out the pit.
