Each knife in this line is cut from a piece of steel using a laser beam to make a perfect blade. The blade and shape on this 6.5-in. Santoku Knife resemble the Japanese Cook's Knife. It's just right for preparing sushi and sashimi - or anything else you want to slice paper-thin. The hollow indents in the blade allow food to slide right off without sticking. Also works well when dicing onions or other vegetables.

Balance isn't the greatest, but overall a good value. Sharpness is excellent, foods slid off blade easily.
Not really good for cutting MATS. The sharpness causes it to stick in the mat.

This knife is wonderful - and SHARP!!! I am petite - and thought that this size would be appropriate - and I was right! It is heavy enough to use on more than just vegetables. Great price and value!

I've been wanting to buy a nice Chef's knife, and after seeing this knife's recommendation on a TV New's program I decided to give it a try. It's nice and light and cuts very well. The identations on the knife help keep what you are cutting from sticking to the knife, but I must say I've chopped carrots, garlic, shallots, etc. and they do still stick a bit. I'd say I am very happy with this knife and I would recommend it.

Although it is a little expensive, if you can afford it, you should buy this knife. It is absolutely the best knife in my kitchen. You can slice any meat as thin as you like with ease.

This knife does exactly what I want it to do. It's easy to use and fits nicely in my hand. I got the idea from the show 30 Minute Meals with Rachael Ray. She uses the Santoku knife with ease......

I bought one for my son who cooks for a living. After I tried his I had to have one for me. Finally, I bought one for my dughter, who is just starting to cook more and wanted "a few essentials." I couldn't think of anything more useful than a high quality yet easy to use knife.

I have been looking at this knife and pricing it in other stores. This was the best price that I have seen. It is superior in quality too. I would definitely recommend this knife.

I feel like Rachel Ray!!! This knife does it all...I rarely use any other knife now...worth it's weight in gold. I hope it's easy to sharpen.

I like the thinness of the blade which gives me the ability to make precise cuts. Plus the blade is sturdy enough to withstand some abuse.
