Each knife in this line is cut from a piece of steel using a laser beam to make a perfect blade. The blade and shape on this 6.5-in. Santoku Knife resemble the Japanese Cook's Knife. It's just right for preparing sushi and sashimi - or anything else you want to slice paper-thin. The hollow indents in the blade allow food to slide right off without sticking. Also works well when dicing onions or other vegetables.

The Santoku Knife is a true joy to use. It is sharp enough to cut razor thin slices of tomato without breaking the slice into bits. Such little effort goes into chopping now. I am on the Southbeach Diet, so I need to chop lots of veggies and this knife fits the bill perfectly. I'm just wondering why I had not bought one sooner! What a snap to get food chopped quickly and get me out of the kitchen sooner!
I loved the first version of this knife that I bought during culinary school so I bought another one for home use.
Be very careful with this one. It cuts any food with almost no pressure at all. I applied it to a bundle of asparagus and didn't even have to saw back and forth.
I did find that some foods still stick to the blade. Even so, it is better than any knife I have had and I seem to collect them.

This is my first Santouku knife and I used it for the first time last night? Amazing! Slicing through fruits and vegetables with this knife is like slicing through butter! This knife has immediate gained status as one of my favorite kitchen items.
This is my second Santoku knife by Wusthof and since I liked the first so much I got a second. They are really sharp and retain their sharpness better than any other knife that I've had. I would not think about buying any other knives after having these 2.
I have one of these knives and bought this one for my son for Christmas. I wish I had gotten one long ago. It's the most used knife in the kitchen!
This knife is very sharp and is comfortable tohold. The blade is thicker than I was expecting and the little dimples in the blade don't seem to keep the sliced food from sticking to the blade like I thought they were supposed to do. I haven't had it long enough to know how long the sharp edge will hold up, but I'm expecting, for this quality of product, that it will be easy to sharpen and keep for a long time.
Every cook I know treasures the thought of owning a Wusthof knife, but Food Network has finally made them affordable. What can I say! It cuts like butter. Love it!
I bought this knife on sale and received it very quickly. It is a great knife for slicing anything, especially vegetables. Tomatoes, onions, carrots, asparagus, etc., it goes right through them. You do need to be a little careful with the knife because it is incredibly sharp. Overall, it is a great knife and I would recommend it to others.
The knife was from the Gourmet collection and the quality is not as good as the Classic Collection. I returned the knife

Blade is good, but the knife is a little light.
This product will repace my chef's knife for most of my prep work. This knife is quite sharp; I was really pleased at how easily it cut through raw and cooked meat. At first I was a little disappointed at how light the knife was; I would have liked a little more heft. However its light weight does not affect its outstanding performance.
