Each knife in this line is cut from a piece of steel using a laser beam to make a perfect blade. The blade and shape on this 6.5-in. Santoku Knife resemble the Japanese Cook's Knife. It's just right for preparing sushi and sashimi - or anything else you want to slice paper-thin. The hollow indents in the blade allow food to slide right off without sticking. Also works well when dicing onions or other vegetables.

A long-time Wustof user, I found this knife to be of inferior quality and returned it immediately upon receipt. The handle is plastic and very lightweight. The blade seemed very sharp, but because it was stamped rather than forged, it felt flimsy - not reassuringly sturdy like I've come to to love about my other Wustof Classics. I wouldn't pay more than $15 for this knife, and yet they're selling it for far more. Very disappointing. I found the extra cash and bought their "real" version of the Santoku in the Classic line. I will say that the return process was very easy and trouble-free, and the product was delivered fairly quickly, so kudos there.

This knife is excellent - veggies, carving meats, I am thrilled with the results. My old knife required much too much "manpower" to cut. This knife is effortless.

This is a great knife. The one thing I really like about it is the food does not stick to the knife.

Don't you hate it when you're trying to slice a cooked potato and your knife just smushes it instead? Try using a <i>santoku</i> knife instead. Its blade has specially designed hollow indentations that reduce drag when cutting, so your knife will slice right through. Santokus are also great for cutting soft cheeses, slicing onions, and just about all your everyday chopping tasks.
