An innovation in ceramics technology, Emile Henry's new line of Burgundy Clay Flame-Top ceramics products work directly on a gas flame or an electric or halogen hob without a diffuser, without any fear of cracking or breaking. Much lighter, (30%), than many types of comparable metal cookware products, Flame-Top is microwave and dishwasher-safe, cleans up very easily, is extremely strong and durable, goes under the broiler, and can go directly from a freezer or a refrigerator to a hot oven to the table, where it will retain the cooking heat for a very long time.
About Emile Henry...
In the Burgundy region of France is the legendary maker of fine French cookware named Emile Henry. There, potters still hand craft each piece from the local Burgundy Clay - one of the purest of clays. Containing no lead, the clay is one of the best materials for baking and serving.
I came across this Brazier by Emile Henry as I was looking for something that could be used to start dinner on the top of the stove and finish cooking in the over. This pan is perfect. It browns meats perfectly and then allows the cooking liquids to reduce into a perfect gravy. Looks beautiful at the table and weighs much less the the cast iron brazier pan I had been considering. Best of all, cleans up easily in the dishwasher. I originally looked at the stew pot, but I love the shape of this pan. Although a bit pricey, I think it was worth the cost.
I have never seen a piece like this before. It's much larger than my largest frying pan. I like the fact it can be on the stovetop or in the oven, or move from one to the other. But best of all, like all these pieces, it is a beautiful serving container which keeps warm for a long time without the lid. A curious item, and well worth the purchase.

Braising (that is, low-temperature cooking in gently simmering liquid that comes halfway up the sides of food) makes the toughest cuts tender and gives you a great sauce. It does take a bit of time, but you get delicious results for very little effort.
