I came across this Brazier by Emile Henry as I was looking for something that could be used to start dinner on the top of the stove and finish cooking in the over. This pan is perfect. It browns meats perfectly and then allows the cooking liquids to reduce into a perfect gravy. Looks beautiful at the table and weighs much less the the cast iron brazier pan I had been considering. Best of all, cleans up easily in the dishwasher. I originally looked at the stew pot, but I love the shape of this pan. Although a bit pricey, I think it was worth the cost.
I have never seen a piece like this before. It's much larger than my largest frying pan. I like the fact it can be on the stovetop or in the oven, or move from one to the other. But best of all, like all these pieces, it is a beautiful serving container which keeps warm for a long time without the lid. A curious item, and well worth the purchase.
