I love this pan. My daughter had given me a set of Calphalon pans and I am so very proud of them. I needed another pan between 1-1/2 qts and 4 qts. This pan is just perfect. I have already used it 4 times and I am sure it will be my "go to" pan every day. Thanks!!!

This is the third pan of the stainless steel Contemporary collection that we have purchased. We also have the 8 and 10 inch fry pans. There are both pluses, and minuses, to this collection. On the plus side, the pans heat evenly and achieve cooking temps at lower heat settings. On the minus side, food tends to stick more easily and these pans discolor more easily than two other brands of stainless steel cookware that we have used regularly. The relatively rough brushed finish on the inside of these pans contributes to food easily sticking as there are more surface ridges for the food to latch onto during cooking. More attention than usual must be paid to the food you're cooking to avoid sticking. I would recommend a much smoother, more polished finish to reduce the opportunity for food to stick. Regarding the discolor issue, these pans take a bit more work than our other pans to remove surface discoloration. Calphalon does not publish the quality level of the stainless steel that is used in their pans, but given that our other stainless steel cookware (specifically Revere Ware and Farberware) does not discolor as easily as we have experienced with Calphalon, Calphalon may wish to re-evaluate the formula of the stainless steel that is used in their pans.
Nonstick cookware no longer appeals to me, for a variety of reasons. This line of stainless steel cookware is not only beautiful, but very functional. I use this pot so often, I bought a second one.

A simple and delicious way to prepare basic chicken breasts is to sear on the stovetop until the outsides are brown, then transfer (in an oven-safe pan) to a 400 degree oven to finish cooking for about 20 minutes.
