The glazes in the Provencale collection are transparent, creating bright, vibrant colors for your kitchen. To make a perfect souffle, the heat needs to be spread evenly over the bottom and sides of the dish, which is why the souffle dish has high, vertical sides. It also has to retain the heat, to stop the souffle from losing it's height. This is the great advantage of earthenware dishes. Savory or sweet, your souffles will always be a success!

I bought this small dish to replace a similar one that I had broken. The quality of this dish is nowhere near the quality of the previous Emile Henry dish I had. The identical dish I ordered with this one, in a different color was fine. The people at Cooking.com were great--they sent me a replacement, even though they said the imperfections were normal. The replacement was also not up to snuff. I don't see why one color would have better quality than another, and I'll be worried about buying more Emile Henry dishes in the future.
