About Emile Henry...
In the Burgundy region of France is the legendary maker of fine French cookware named Emile Henry. There, potters still hand craft each piece from the local Burgundy Clay - one of the purest of clays. Containing no lead, the clay is one of the best materials for baking and serving.
This pie dish is great! Looks great and washes easily in the dishwasher. While the price is somewhat high, the quality is excellent.
It is much perttier then the picture shows. It has just the right size ruffels on top. It is a little pricey. However, I would buy it again.
These pie dishes (I bought two) are just great. They're quite thick and seem to bake very evenly, as well as being very beautiful in color (pink) and elegantly designed.<br>While they seemed a bit costly at first I figured I'd treat myself, and I'm very pleased I did; these are of the highest quality.<br>I'd recommend these to anyone who loves to bake and doesn't mind spending a bit more money for a great pie dish.
I have to say my main reason for purchasing this was because it is pink :) Most of my kitchen appliances, tools, etc are pink. I've also had great experiences with my other Emile Henry pieces so I assumed that I would not disappointed and I am not! :) Not only is this pie dish gorgeous, but it is the best. I also have a Pyrex and two Calphalon Nonstick ones, and this surpasses them by far. The crust cooks and browns perfectly, doesn't stick and it is a snap to clean. I purchased a second one as well :)
I'm not a professional by any means, but my pecan and pumpkin pies cooked better than they ever have. Same recipie, different dish. LOVE IT
When you're making pie dough the key is to work quickly and keep the butter as cold as possible. This will ensure your dough retains pockets of fat as it bakes, which in turn creates the buttery, flaky crust we all love. That's why it's best to make a pie on a cold day, or in a well air-conditioned room.
