I bake bread. I love a crusty bread with a soft center. This is my favorite knife to slice bread. It doesn't crush even when you can't wait for the full cool down time. Don't stop their it is very versatile with a nice size that isn't to big or too small. Like all Shun knives very strong and very sharp.
I purchased this for my wife as an addition to the Shun set she has been using for a couple of years. All the knives are excellent and she thought another one was not necessary. After using the U2-Ultimate Utility Knife for a short while, however, it has become one of her favorites.
This is called a utility knife, and it is indeed the one I seem to reach for regularly. I did not rate it a 5 simply because it is not the finest version that Shun produces, at least from a cosmetic point of view. It is kind of ugly as well.
This is a very versatile knife. I have 5 other shun knives, but this is my first with a serrated blade. It is fabulous for cutting tomatoes or bread. Although its blade has an odd shape it did not take long to adapt. If I could change one thing, I would make the handle slightly different. However, in spite of this I still rate it 5 stars because of its blade. I was able to purchase this on sale for under $ 90 and consider it an extremely good value. I expect it to last many years like my other Shun knives.
