The high-carbon stainless steel blades are hardened to maintain a sharp edge and full tangs provide perfect balance with riveted, high-impact triple-riveted composition handles.
Wusthof's newest state of the art technology incorporates a new computer controlled method for putting the edge on Classic knives. This technology allows for an exacting edge from the tip of the knife down to the heel of the knife. With this newer precision, the knives are made sharper to 14 degrees per side for a total of 28 degrees. The knives are now sharper and this refinement increases the sharpness retention because exacting angles and edges last longer than edges sharpened by hand. The result is a knife that is 30% sharper and the ICP (Initial Cutting Performance) lasts twice as long.

I really love my new knife
I have about 12 Wusthof knifes and this one is my new favorite. It is easy to use, very sharp and you can cut meat in very thin strips. Did I say very sharp I mean VERY sharp. Great Knife.

I finally got my Santoku knife and I love it. It's very sharp and cuts through vegetables, meat and whatever else without any effort. Since it is so sharp I'm sure to pay careful attention when slicing. It is now the first knife I reach for.
This knife is great. It slices tomatoes without squishing them - even ripe ones! It is so good, I went out and bought one for my brother for Christmas. And I bought a rockered one the same size (easier to chop repetitively) and a 5" version. If only I had one years ago...

This knife slices through meat and vegetables so easily and smoothly. I am really impressed by how sharp it is although I have only had it for a couple of weeks. It comes with a sharpener so I think I will be able to keep the blade sharp. The knife is not meant to chop through thick rinds and such as the blade is very thin. But used to slice or chop it is a great knife.
This was a Christmas gift for my husband who has been cooking for about 2 years. He loves the feel of the knife, the weight and balance and the ease of cutting.

This knife is replacing several other knives in my collection. I have used it every day since I got it. It is fabulous. I highly recommend it.
I ordered this knife mainly so I could try it. First, I like Wusthof knives better than any other German made knife. I was surprised at the light weight of the blade. This wasn't a plus for me because I would have liked a heavier blade for better balance. Nevertheless, this is a useful addition to the knives I use daily.
I ordered the knives for my adult son as I already use these same knives in my Bistro Kitchen and know them to be excellent. The price through Cooking.com was the best on the market, as I did a lot of comparison.
the knife is very light weight and also works great left handed. It is very precise and great for thin slicing, really like it
I have used my knife quite a few times since I received it. I love it in most every way. I have to say, I did expect the weight to be a bit heavier...other than that...it's razor sharp and does the job.
