In Solingen, Germany, each piece is hand-forged in 38 manufacturing steps by skilled craftsmen. The high-carbon stainless steel blades are hardened to maintain a sharp edge and full tangs provide perfect balance with riveted, high-impact triple-riveted composition handles.

Wusthof's newest state of the art technology incorporates a new computer controlled method for putting the edge on Classic knives. This technology allows for an exacting edge from the tip of the knife down to the heel of the knife. With this newer precision, the knives are made sharper to 14 degrees per side for a total of 28 degrees. The knives are now sharper and this refinement increases the sharpness retention because exacting angles and edges last longer than edges sharpened by hand. The result is a knife that is 30% sharper and the ICP (Initial Cutting Performance) lasts twice as long.

I was skeptical. How much different could this knife be from the "cheapie" knives I already have. The other reviews on this website gave me the motivation to try one. I absolutely love this knife. Who knew that you don't have to squash your veggies as you cut them! I will recommend this to my family and friends. This is the perfect size knife and I find myself grabbing it for all my cutting needs.

This knife is very sharp, light and well-balanced. The combination of a thinner blade than a standard chef's knife with the hollow edge design minimize drag when cutting larger items, such as slicing large onions.

I have given this knife as wedding, birthday or Christmas gifts because I absolutely love my own. This knife will save you money in the long run because you won't want to buy the prepackaged, ready-to-use, pricey veggies because you will want to bust out your Santoku and chop your own!

Nicely balanced, attractively finished, razor sharp knife. Handle is amply offset. Slight curve to the blade for mincing. Good experience with this manfacturer in the past.

Cooking Tip From the Food Network Kitchens

Don't you hate it when you're trying to slice a cooked potato and your knife just smushes it instead? Try using a <i>santoku</i> knife instead.
