This brand is touted by Alton Brown as the knives he has always hoped for but didn't know he wanted. Because my father enjoys a "real" knife in the kitchen, I purchased this for him as a Christmas gift. He can't cut up enough things! In comparison to this edge, all of the other knives they own seem extremely dull. In addition, the weight of the knife is fantastically balanced, and very easy to use, slicing through everything "like butter".<br><br>The 10" blade isn't for the weak of heart - it does look huge. But I expect that the smaller chef's knives have the same superior performance.
The 10 inch chef's knife is a high quality product. The knife is very sharp which makes it ideal for choppong and slicing. I have even found it to be an excellent slicer for ripe tomatoes. It is somewhat large so it would not be good for someone with small hands. It took me a couple of days to get used to the knife but now I reach for it every time.
Excellent! I was worried about the price of this knife -- untill I used it! I had never paid more than $25 for a kitchen knife before, but now I know how right all those folks are, when they say you don't know what you're missing untill you prepare a meal with a really fine blade. I'll never hack at ingredients with cheap steel again!
Here is my story: Bought some infomercial knives...then took a knife skills class. Should have taken the knife skills class first and I would have been better educated. Although the informercial knives were good (I rarely use them now), this knife is far superior. For my purposes this knife was superior because the unique handle shape fits my hand well and allows me superior knife control. This is a fantastic knife and you will get the most out of the knife with a hands on knife skills class. If you are just starting out and do not have a knife block then I recommend you buy a blade cover. I say this because the box this knife comes in, although beautiful, it is too large to fit in a drawer thus not practical for storage purposes. I hope this review helps!
For the first time I own a first class chef's knife made from the finest modern steel that handles perfectly and is not too heavy. Use a diamond sharpener and have no trouble refreshing the edge when needed as seldom as might be necessary.
