Wusthof's newest state of the art technology incorporates a new computer controlled method for putting the edge on Classic knives. This technology allows for an exacting edge from the tip of the knife down to the heel of the knife. With this newer precision, the knives are made sharper to 14 degrees per side for a total of 28 degrees. The knives are now sharper and this refinement increases the sharpness retention because exacting angles and edges last longer than edges sharpened by hand. The result is a knife that is 30% sharper and the ICP (Initial Cutting Performance) lasts twice as long.

Great Bread Knife

The knife blade is thick enough so that it does not flex when slicing bread. The blade also allows for cutting thin slices of bread easily in a large loaf of dense wheat bread. This knife works so well it is replacing our original bread knife.

Can't believe I found a bread knife that performs better than my Cutco one, but this one does. It even slices freshly baked French Bread loaves without "squishing" it beyond recognition. Wish I had not taken so long to finally give up on my other one.

Remember never to store good bakery bread in plastic bags- it will ruin the crust. Instead, store in a paper bag at room temperature. If you don't finish it within a day or two, slice and put in the freezer for the next time you want toast for breakfast.
