The high-carbon stainless steel blades are hardened to maintain a sharp edge and full tangs provide perfect balance with riveted, high-impact composition handles.

The serrated edge of this Classic 8" Bread Knife makes cutting a loaf as easy as slicing through warm butter.

Wusthof's newest state of the art technology incorporates a new computer controlled method for putting the edge on Classic knives. This technology allows for an exacting edge from the tip of the knife down to the heel of the knife. With this newer precision, the knives are made sharper to 14 degrees per side for a total of 28 degrees. The knives are now sharper and this refinement increases the sharpness retention because exacting angles and edges last longer than edges sharpened by hand. The result is a knife that is 30% sharper and the ICP (Initial Cutting Performance) lasts twice as long.

I had a very good first impression of this knife. The knife is light, easy to use, and comes very sharp. But being a professional chef really wears on the knives I own. I was expecting this wusthof to stay sharp a little longer than it did. I use this knife on a daily basis and it was getting a little dull after 2 months. For the home cook I would recommend this knife. Wusthof is a great company and they offer some of the finest knives out there. It will do more than you will ever need it to do in your home. However, for a professional who will use this knife every day, I would suggest something a little less expensive since it will go dull pretty quickly with constant use.

Great knife

I am left handed, but I didn't want to spend the money on the 9 inch left handed knie. The 8 inch righted knife cuts so well through fresh, hot bread, tomatoes, and other things that require a serrated edge.

Remember never to store good bakery bread in plastic bags- it will ruin the crust. Instead, store in a paper bag at room temperature. If you don't finish it within a day or two, slice and put in the freezer for the next time you want toast for breakfast.
