Thanks to its blade size and precision, the black-handled 2.75-in. Paring Knife by Wusthof Classic is a superior tool for delicate tasks. Prized possessions of professional chefs, Wusthof knives are an invaluable asset of any kitchen. Every element of this renowned cutlery contributes to its precision and ease of use. In Solingen, Germany, each piece is hand-forged in 38 manufacturing steps by skilled craftsmen. The high-carbon stainless steel blades are hardened to maintain a sharp edge and full tangs provide perfect balance with riveted, high-impact composition handles.
Wusthof's newest state of the art technology incorporates a new computer controlled method for putting the edge on Classic knives. This technology allows for an exacting edge from the tip of the knife down to the heel of the knife. With this newer precision, the knives are made sharper to 14 degrees per side for a total of 28 degrees. The knives are now sharper and this refinement increases the sharpness retention because exacting angles and edges last longer than edges sharpened by hand. The result is a knife that is 30% sharper and the ICP (Initial Cutting Performance) lasts twice as long.
Who knew a knife could make such a big difference. I barely touch the pulp now when peeling apples. I don't know if it's the design or the sharpness. The design does help ergonomically.
This is probably my favorite knife. I bought the current purchase for a gift--to share the joy! I use it for fruits and vegetables and find it easier to manage than a paring knife.
This knife was a gift to my mother. She had been visiting me and used my bird's beak knife. She thought it was a great knife so I got her one for Christmas.
I do not use this knife as often as others but when it's the right one it is unique and so easy to use.

Paring #2: Making a cherry pie but forgot to pick up a cherry pitter? Don't fret, a sharp paring knife will easily get the job done. Just slice the cherry in half lengthwise, gently twist the two sides apart, and pop out the pit.
