It holds its edge much longer than steel and lasts many months or years without sharpening. Stain and rust-resistant, the blade is impervious to the food acids, which discolor steel products and no metallic taste or smell will be absorbed your food from the knife. A non-stick ceramic surface makes for easy cleanup and a lightweight and perfect balance make it a pleasure to use. I really enjoy this new knife; it is cool looking; very sharp, light and cuts everything with little pressure; you never will saw back and forth to cut anything again; the only thing; if anything that I probably wanted was a bit longer knife and maybe a little more weight. other than that. it is my 1st good knife I bought and it was worth every dollar. I used my cashback bonus from Discover Card to help offset the cost of this knife. Had it been full price I never would have bought it but it is worth every penny either way. It's sharp, light and does some amazing cutting. It's also been a topic on several occasions when guests see me using it.
This is our second Kyocera Ceramic knife; the first was a smaller Santoku model.<br>They both are great to use -- light, exceptionally sharp, and easy to control.<br>We have used and appreciate Kyocera's re-sharpening servicew. I had abused the knife by cutting through a chicken back bone and chipped the edge.<br>Kyocera restored the edge and returned it good as new.
light weight and sharp
Excellent knife. The handle on my old one broke, and others I tried were awkward or heavy, or just didn't cut well. This is light and my hand fits the handle perfectly. I cook every meal and use the knife primarily to cut vegetables at least three times a day. A great knife, especially for women.
