I checked this out from the library and renewed it maximum number of times prior to purchase, then decided I could not pretend to bake without it. This book has fabulous recipes and provides the understanding of how it all works, plus a way to bring the knowledge to any recipe. I particularly like the section on how to create larger quantities of frosting, filling, and cakes since I sometimes make cakes for large family gatherings or other celebrations -- but not often enough to be expert at large sizes without a few nudges.
Very good book.
What a great book. I love that the science of why she does things the way she does is included within the book. This helps when you want to go it alone or make your own recipes. It is like having a baking book, encyclopedia of baking and dictionary all at once. If you buy no other cake books or just want one--make this one it!
