The authors of this book offer greater in-depth knowledge of the art and ceremony of bread making than most bread books do. Their form of writing easily sustains ones interest through the entire book, while reading about the forms and shapes of different breads, the various ingredients and wonderful flours used throughout the world, and the meaning of bread in cultures from the ancient world to modern times. It's a great book.
